Mammoth Sandwich Island Salsify is an heirloom, semi-hardy, cool-weather annual vegetable that is native to the Mediterranean region but can be found growing throughout the United States. At maturity, this plant reaches a height of 24-36” and features grass-like foliage, attractive, purple daisy-like flowers, and 8-9" long white tapered white flesh roots vegetable. This plant attracts bees and butterflies, is frost tolerant, and is edible and medicinal!
